TOMATO SOUP + GRILLED CHEESE [vegan]

A minimal ingredient tomato soup recipe to ring in the new fall season 🍅🍂

WHAT YOU NEED:

28 oz. can of diced tomatoes

1/2 a white onion, chopped

3-4 tablespoons vegan butter

2 tsp basil or a couple basil leaves

1 1/2 cups of water

salt to taste


METHOD

Melt the vegan butter at the bottom of a medium sized pot on low heat. Then add the diced tomatoes, chopped onion, basil, water, and salt to the pot. Bring to a boil then reduce to a simmer and cook for about 35-40 minutes. Once finished cooking, add everything to a blender and blend until smooth and serve!


GRILLED CHEESE

WHAT YOU NEED:

sourdough bread

vegan butter

vegan cheddar cheese (I used Miyokos cheddar)

METHOD

Melt 1/2 a tablespoon of vegan butter onto a saucepan and generously coat both sides of each slice of bread. Add your cheddar cheese and cook each side for about 4 minutes on medium heat or until crisped and cheese is melted. If you have a panini press, this would work best!
