RECIPES THAT WILL MAKE ANYONE GO PLANT-BASED — MUSHROOM “BBQ” FLAT BREAD
Welcome to a series I like to call “Recipes That Will Make Anyone Go Plant-Based”… maybe even your dad. This series is where I showcase all my favorite vegan-ized meals I’ve made to help with the transition into a plant-based diet. These meals aren’t necessarily supposed to replace the taste of meat exactly… some are more meat-tasting than others. However, these meals show how versatile and not boring a plant-based diet really can be. I’m always being asked, “So what do you eat”, when people hear that I don’t eat meat, dairy, fish or eggs…. my response, “A lot, actually.”
These meals are for the people needing a little bit of extra help while switching over their lifestyle, people who are experimenting with a plant based diet, and anyone really, who just wants a damn good meal that doesn’t hurt your health or your wallet.
This recipe is one of my favorites! It’s such a quick recipe and is FILLED with flavor. Mushrooms are my favorite food to make “meat replacements” with given its texture and color… not to mention the significant amount of protein they have!
WHAT YOU WILL NEED
1 small onion
1 tsp garlic powder
1/2 tsp paprika
1/2 tsp mushroom powder
1 tsp chili powder
1 tablespoon apple cider vinegar
1 tsp GF tamari sauce
about 2 1/2 cups mushrooms (I used shiitake, feel free to use any kind you like)
1 1/2 cups of plain marinara sauce (I used Raos)
1/3 cup maple syrup
salt & pepper to taste
Olive oil
Oregano
Basil
OPTION
TIP: You could turn this recipe into a toast and use bread, or make it into a sandwich as well!
METHOD
Begin to finely chop your onions or throw them in your food processor to save some time.
Toss all the onions into a medium size sauce pan with a little bit of olive oil.
Add your garlic, paprika, chili and mushroom powder and sauté. Then add your marinara, maple syrup, tamari, and apple cider vinegar.
Stir and let mixture boil for about 1 minute so it gets a thicker consistency. While your sauce is warm, sauté your cut and washed mushrooms with olive oil and season with pepper. I cut mine nice and thin to give it that “BBQ” look.
Once your mushrooms have absorbed the oil, season will salt and pepper to taste as well as the basil and oregano. Finish sautéing once the mushrooms are soft and done.
Toast your pita bread for about 3-4 minutes in a toaster oven and add the “BBQ” mix to your mushrooms and stir to combine.
Lastly, just scoop some of the mushroom mixture on top of your pita or toast!
